Angle Food Cake Tips

To get the best cake height when making angel food cake, do not grease or flour the pan unless the
recipe calls for it
After filling an angel food cake pan with batter, run a knife through the batter to remove any air
pockets
To produce a marbling effect, fill the pan with batter, add a few drops of food coloring on top and
use a butter knife to swirl the color through the batter
Bake angel food cake on the lowest oven rack to prevent the top from getting too brown
Angel food cake is done when the cracks are dry and the top springs back when lightly touched with
your fingertip
To prevent angel food cake from deflating, hang the pan upside down over the neck of a wine bottle
immediately after baking until the cake is completely cool
To loosen angel food cake from the pan after it has cooled, run a metal spatula around the edge of
the pan and the center tube, turn the pan upside down and tap the side of the pan until the cake slips
out
