Non-Crusting Buttercream Icing
This recipe is very smooth and delightful. A hot knife can be used to smooth the icing on the cake. Non-crusting buttercream icing does not form a thin layer of crust so the paper towel method cannot be used.
Yield
6 cups
Ingredients
2 pounds sifted confectioners (powdered) sugar
2 cups softened butter or margarine
2 cups solid vegetable shortening
2 tablespoons clear vanilla extract
1/4 teaspoon almond extract
optional: 2 tablespoons of meringue powder
Directions
Cream the butter and shortening until smooth. Add confectioners sugar and vanilla. Beat until smooth. Do not over mix or beat on high speed.
Additional Information
If you live in an area that is high in humidity, add meringue powder to stabalize the icing. If using the icing to make roses, include the meringue powder to keep the petals upright.
