Roll-Out Sugar Cookies
A firm vanilla sugar dough recipe for cut-out cookies.
Yield
About 20 5" cookies
Ingredients
1/2 cup butter or margarine, room temperature
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
2 3/4 cups all-purpose flour
Directions
Preheat oven to 400°F. in a large bowl, cream butter and sugar with an electric mixer. Beat in eggs and vanilla. Mix baking powder and flour, add one cup at a time, mixing after each addition. The dough will be very stiff; blend last flour in by hand (if dough becomes to stiff, add water, a teaspoon at a time). Do not chill dough. Divide dough into 2 balls. On a floured surface, roll each ball into a circle approximately 12 inches in diameter and 1/8 in. thick. Dip cutters in flour before each use. Place on an ungreased cookie sheet.
Bake 6-7 minutes or until light golden brown. Remove from cookie sheet immediately and place on cooling grid.
