Peanut Butter Spritz Cookies

Yield

3-4 dozen cookies

Ingredients

1/2 cup solid vegetable shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Directions

Preheat oven to 375ºF. In a large mixing bowl, cream together shortening and peanut butter. Gradually add sugars, blending well. Add egg beating until smooth. Add vanilla. Set aside. Stir flour into peanut butter mixture. Place dough into cookie press and press cookies onto ungreased cookie sheet.

Bake 6-8 minutes or until light golden brown. Cool 2 minutes on cooling grid. Remove from cookie sheet and continue to cool on grid.
