Peanut Butter Spritz Cookies
Yield
3-4 dozen cookies
Ingredients
1/2 cup solid vegetable shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Directions
Preheat oven to 375ºF.
In a large mixing bowl, cream together shortening and peanut butter. Gradually add sugars, blending well. Add egg beating until smooth. Add vanilla. Set aside. Stir flour into peanut butter mixture. Fit a cookie press with the desired template and fill with dough. Press out cookies 1" apart onto ungreased cookie sheets.
Bake 6-8 minutes or until light golden brown. Cool 2 minutes on cooling grid. Remove cookies from cookie sheet and continue to cool on grid.
