Pastel Spritz Cookies

Yield

10 dozen cookies

Ingredients

1 1/2 cups butter or margarine, room temperature
1 cup granulated sugar
1 (3 ounce) box strawberry gelatin*
1 large egg
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking powder

Directions

Preheat oven to 400°F. In a large mixing bowl, cream butter, sugar and gelatin until light and fluffy. Mix in egg and vanilla extract. Add dry ingredients. Mix well. Fit a cookie press with the desired template and fill with dough. Press out cookies 2" apart onto ungreased cookie sheets.

Bake 8 to 10 minutes or until edges are very lightly browned. Cool 2 minutes on cooling grid. Remove cookies from cookie sheet and continue to cool on grid.

Variation

* May substitute any flavor/color gelatin desired.
