French Buttercream Cookies

If you love sugar cookies, but do not enjoy rolling them out try these cookies. They are light, airy, and buttery.

4 dozen

Ingredients

1 1/2 cups confectioners’ (powdered) sugar
1 teaspoon cream of tartar
1 cup butter or margarine, room temperature
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 large egg
2 1/4 cups all-purpose flour

Directions

In a large bowl, combine sugar, cream of tartar, butter, vanilla, baking soda, salt and egg on low speed for 1 minute. Add flour gradually, blend at low speed. Chill dough for 15-30 minutes before shaping. Shape into 3/4" balls, place on greased cookie sheet about 2" apart. Flatten with fork. Sprinkle with sugar. Bake at 350°F for 5-8 minutes. Let stand on cookie sheet about 1 minute.
