Cinnamon Crisps

5 dozen cookies
Ingredients
1 cup butter or margarine, room temperature
1/2 cup brown sugar, firmly packed
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons ground cinnamon
Directions
In a large mixing bowl, combine butter, brown sugar and vanilla together. Beat at medium speed until creamy. Add flour. Beat at low speed until until mixture forms a dough.
Divide dough into fourths. Shape each quarter into a 4" x 1 1/2" log. Wrap each log in plastic food wrap. Refrigerate at least 1 hour.
Preheat oven to 375°F.
Cut logs into 1/4" slices with a sharp knife. Place 1" apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until lightly browned on edges. Cool slightly.
Combine sugar and cinnamon in small bowl. Roll warm cookies in cinnamon-sugar mixture. Place on wire rack to cool.
Additional Information
For alternative shapes, flattening side of logs to form triangle, square or rectangular shaped cookies.
