Peanut Butter Penuche
Penuche is a fudge-like candy made from brown sugar, butter, and milk, using no flavorings except for vanilla.
Yield
1 8" x 8" pan
Ingredients
1/2 cup butter
2 1/4 cups brown sugar, packed
1/2 cup milk
3/4 cup peanut butter
1 teaspoon vanilla extract
3 1/2 cups confectioners (powdered) sugar
Directions
Line an 8" x 8" square baking pan with aluminum foil, extending foil at least 2" over edges of pan. Set aside.
In a medium saucepan, melt butter over medium heat. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring frequently. Remove from heat. Stir in peanut butter and vanilla. Pour over powdered sugar in a large mixing bowl. Beat until smooth. Pour into prepared baking pan.
Refrigerate until firm. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into 1" squares.
Storage
Store in the refrigerator in a tightly covered container.
